In order to somehow diversify the lean table in winter, especially on the eve of Great Lent, it is necessary to include in food more cereals and vegetable dishes. For example, lean cabbage rolls are quite nutritious and taste great. Those who do not know the recipe and preparation process for this food will be surprised to learn that they contain absolutely no meat.
It is necessary
- garlic - 3 cloves;
- raw potatoes - 2 pcs;
- carrots - 2 pcs;
- onions - 1 pc;
- barley or wheat groats - 100 g;
- white cabbage - 14 leaves;
- pepper and salt;
- vegetable oil;
- vegetable seasoning;
- tomato paste - 3 tablespoons

Step 1
To prepare lean cabbage rolls, rinse the cereals several times in water, then pour a glass of boiling water and cook until all the water boils away. You can put the fire on slowly, do not cover the pan with a lid. The most convenient way is to cook any porridge in cellophane bags.
Step 2
After that, remove the pan from the heat and cool. Cabbage leaves, which are the basis of cabbage rolls, separate from the head of cabbage and put in boiling water for 3 minutes. You can boil the forks completely peeled from the top leaves.

Remove the leaves on a plate, when they cool, cut off the coarse veins with a knife. Do not pour out the cabbage broth. Pour oil over the pan, sauté the finely chopped onion. Grate the carrots on a fine grater, and fry the vegetables until golden brown.
Step 4
In a bowl, combine the fried vegetables, porridge, and coarsely grated potatoes. Pepper and salt the resulting mixture. Our lean cabbage rolls will be stuffed with it. Add spices and mix thoroughly.
Step 5
It's time to prepare blanks of cabbage rolls. Place the cabbage leaf on a cutting board, place 2 tablespoons of the filling in the middle. Fold up the sides of the cabbage and then fold it into a tight envelope.

Preheat a frying pan with oil and lay out the stuffed cabbage rolls seam down, fry them on each side. The fried product will need to be cooked in a deep saucepan, put them there, or in a roasting pan.
Step 7
Add cabbage broth so that it completely covers our lean cabbage rolls. Cover and cook for 20 minutes. While cooking, peel the garlic cloves and add them to the pot along with the tomatoes. Simmer cabbage rolls on low heat for 20 minutes.
Step 8
You managed to cook wonderful lean cabbage rolls, remove them from the heat, let it brew for 10 minutes and serve the prepared cabbage rolls to the table. You can, if you wish, add dishes from mushrooms or potatoes to them.
