This dish is originally from the Chinese province of Sichuan. There are many variations on how to cook Sichuan chicken. Some chefs add ginger to the soy sauce base. Others - chili peppers, others marinate fillets in rice vodka or sherry. In general, the final recipe will depend on your personal taste. Traditionally, Sichuan chicken is served with boiled rice.

- chicken fillet - 0.5 kg;
- sweet bell pepper - 1 pc.;
- soy sauce - 5 tbsp l.;
- peanuts or cashews - 150 g;
- sesame oil - 1 tablespoon;
- fresh ginger - 30 g;
- garlic - 2 cloves;
- starch or corn flour - 1 tbsp;
- wine or rice vinegar - 2 tablespoons;
- sugar - 1 tsp;
- green onions - 1 bunch;
- cayenne pepper - 1/4 tsp;
- boiled beans - 200 g;
- hoi sin sauce - 4 tablespoons;
- sherry - 2 tbsp;
- chicken broth - 100 ml.
Instructions
Step 1
Prepare the marinade. To do this, combine sesame oil, soy sauce, and cornstarch or cornmeal in a deep bowl. Pass the garlic through a press, peel and chop or grate the ginger, add to the marinade. Also, if desired, you can pour a spoonful of sugar into the sauce.
Step 2
Chop the chicken fillet, preferably not the breast, but the gray meat from the thighs, into small pieces. Then wash in cold water and mix thoroughly with the marinade. Place the chicken and marinade bowl in the refrigerator for 3 hours.
Step 3
Heat vegetable oil in a deep frying pan, add chicken pieces. Chop peanuts or cashews. Lightly fry the nuts in a dry skillet without oil. Cut the bell peppers diagonally into cubes. Then add the nuts and peppers to the fried chicken and simmer until the meat is tender. If you like spicy food, chili peppers can be substituted for bell peppers. Also, if desired, carrots cut into cubes can be added to the dish.
Step 4
You can cook Sichuan chicken without marinating the meat. In this case, first fry the poultry pieces in a deep frying pan until half cooked, then add soy sauce, sesame oil, wine or rice vinegar and sugar. In this solution, the chicken should be simmered for about five minutes under the lid. Then add diagonally chopped green onions and a quarter teaspoon of cayenne pepper. Simmer for another two minutes.
Step 5
Sichuan chicken can also be served with kun-po sauce. To prepare it, crush the beans in a bowl, mix them with hoi sin sauce, sherry, sugar, garlic, wine or rice vinegar and chicken broth. Pour this mixture over cooked chicken before serving.
