Eggplants are an excellent product, and dishes made from them are found even on the pp-menu. The eggplant recipes are pretty simple and don't require fancy ingredients, but the results are spectacular!
Eggplant boats with minced meat and vegetables
To prepare this original dish, you will need:
- 4 eggplants;
- 300 grams of mixed minced meat;
- a pair of onion heads;
- one bell pepper;
- two or three tomatoes;
- a couple of cloves of garlic;
- chopped greens;
- 75-100 gr of grated hard cheese;
- a couple of tablespoons of vegetable oil;
- salt and pepper to taste.
Cut the eggplants lengthwise into two parts, remove the pulp. The pulp should be soaked in cold water, and the boats with the skin should be sprinkled with salt. Peel the onions, garlic, tomatoes and peppers and chop finely. Fry the onion and garlic in vegetable oil, then add the minced meat and fry until the minced meat is ready, stirring continuously. Finely chop the eggplant pulp and add to the minced meat, fry for another 5-10 minutes. Then add the rest of the vegetables, season with salt, pepper and fry for no more than 10 minutes over medium heat.
Drain the juice from the boats, fill with the filling and put in the oven for half an hour at 180 degrees. About 10 minutes before the end of cooking, sprinkle the eggplant boats with grated cheese and chopped herbs. This dish can be served both cold and hot.
Eggplant with cheese
You will need: two large eggplants; 4-5 ripe tomatoes; a clove of garlic; a couple of tablespoons of sour cream; 50-70 grams of hard cheese
Cut the eggplants into strips about 1 cm thick and leave in salted water for about half an hour to remove all the bitterness, then blot with a paper towel and fry on both sides. Place the eggplants on a foil-lined baking sheet.
Prepare the sauce - pass the garlic through a press, mix with sour cream (or mayonnaise), add soy sauce if desired. Brush the eggplant with it, then place the tomatoes in circles and sprinkle with grated cheese. Bake in the oven for 15-20 minutes. If your cheese burns, then you can sprinkle it not immediately, but 5-10 minutes before the end of cooking.
