The peculiarity of Ossetian pies is their incredible subtlety. Outwardly, they resemble tortillas, but inside each product there is an even layer of juicy filling. To give the cakes this shape, follow the manufacturing technology. Rolling Ossetian pies is a real culinary trick - these pastries are interesting not only to eat, but also to cook.
Step 2
Make yeast dough for Ossetian pies. It is best to do it in a sponge way. Dissolve fresh yeast in a glass of warm boiled water, add one teaspoon of sugar and flour. Leave the mixture for a quarter of an hour until foam appears.
Step 3
Sift the flour into a deep bowl. Pour in the dough, add warm milk and eggs, salt, mix. Heat the dough for 2-3 hours. During this time, it should rise twice - after each rise, carefully knead the dough.
Step 4
Make pie fillings. Chop the greens, cut the cheese into small pieces or grate. Mix herbs and cheese in the required proportion. Peel the onion, chop and mix with the minced meat - you get the filling for the meat pie. Add salt and ground black pepper to each filling to taste. The resulting mixtures must be sufficiently dense. Collect the fillings into balls.
Step 5
Roll out the dough into tortillas. Place a ball of filling in the middle of each. Raise the edges of the dough and connect so that the cheese or meat mixture is inside. Use your hands to knead the filled dough into a tortilla. For minced pies, make a hole in the middle for steam to escape.
Step 6
Place the tarts on the baking sheets. Preheat the oven to 200 ° C and bake the products first on the lower and then on the upper level of the oven. With this method, the pies will not burn, and the dough inside will not remain moist. The baked goods should be well browned.
Step 7
Take out the pies, place them on the board. Grease the surface of each with butter. Let the items cool slightly. Traditionally, Ossetian pies with different fillings are served in stacks of three per serving. Serve sour cream, hot yoghurt sauces, plums or tomatoes separately.
