For the preparation of this dish, only fresh frozen, unpeeled and undamaged small carcasses are suitable. There are two options for fillings in the recipe, but you can get creative with the cooking process and come up with something of your own.

You will need

- 5-6 squids;

- two cloves of garlic;

- a sprig of thyme or a little dry seasoning "Provencal herbs", "Herbs of Italian cuisine";

- a teaspoon of mayonnaise or sour cream;

- 140 grams of cheese (according to your taste);

- vegetable oil for frying

- one onion;

- 200 grams of champignons;

- a tablespoon of sour cream;

- ½ cup rice

- ½ cup of rice;

- one carrot;

- one onion;

one small red bell pepper;

- a teaspoon of tomato paste

Preparation

Note!

Step 1. Place the squid on a defrosting plate.

Step 2. Soak the rice for 15 minutes in cold water.

Step 3. Peel onions, carrots, mushrooms. Remove the stalk and seeds from the pepper. Wash and dry everything well.

Step 4. Finely chop all vegetables and mushrooms separately.

Step 5. Grate the cheese on a fine grater.

Step 6. In one frying pan, put onions, carrots and peppers to fry over low heat. Finally, add tomato paste, slightly diluted with water. Season with salt and pepper. Warm up for a couple more minutes.

Step 7. In another frying pan, fry the onion over low heat. When the onion is soft and golden, add the mushrooms and salt. Cook over high heat. A minute before the end, add sour cream and a small portion of grated cheese.

Step 8. Wash the rice in several waters (until the water becomes clear) and boil until tender. The rice should be crumbly.

Step 9. Add rice to both fillings, stir.

Step 10. Squid gently peel (do not dip in boiling water!). To make it easier to clean, turn them inside out, then return to their original position. Try not to damage the carcass, including the tails (tails will be prettier).

Step 11. Carefully place the filling inside.

Step 12. Put the oven to preheat.

Step 13. Pour vegetable oil into a frying pan, put on low heat. Peel the garlic, cut the wedges in half and place in the skillet. Add thyme or some dry seasoning to it. Warm up for a few minutes, but do not fry: you just need to saturate the oil with aromas.

Step 14. Remove the garlic, heat the pan more. Arrange the squid and fry for 1-2 minutes on each side.

Step 15. Place on a baking sheet, brush with mayonnaise on top, sprinkle with the remaining cheese and place in the oven for 4-5 minutes.

Step 16. Arrange the squid on the plates. Cut into several pieces. Garnish with fresh herbs. Additionally, you can use any sauce that you like best.

Useful Tips

Instead of champignons, you can use wild mushrooms, but they must be properly prepared in advance.

Instead of rice in the first option, you can use buckwheat.
