Strudel - baked goods of traditional Austrian cuisine. For the first time, strudel was prepared with a milk-cream filling in 1696, its recipe was published by an unknown author from Vienna. Today, you can choose any filler for baking, but apple and berry fillings remain unchanged.

Preparation of food

In order to prepare strudel with cottage cheese and berries, you will need: 200 g of drawn dough, 600 g of cottage cheese, 200 g of granulated sugar, 1 egg, 200 g of fresh or frozen berries, 1 tbsp. l. icing sugar, 30 g of corn starch.

Cooking berry strudel

If you are using frozen berries to make strudel, defrost them first. Please note that the berries must be completely defrosted, without excess water. This is very important, otherwise the filling will not be tasty. You can choose one type of berries, for example, blueberries or blackberries, or you can buy a mixture. In such mixtures, as a rule, there are raspberries, and blueberries, and blackberries, as well as strawberries, sometimes also cherries.

Take a medium-sized bowl and break a chicken egg into it, add 200 g of granulated sugar, beat the ingredients into a light fluffy mass. Put the required amount of cottage cheese in the same bowl, beat the products again until smooth.

Line a baking sheet with parchment paper and place the stretched dough on it. Spread the curd filling over most of the dough. Dip the berries in cornstarch, put on top of the curd. Now, using parchment, roll the dough with the filling into a roll and gently turn it seam down so that the roll does not fall apart during the baking process.

Bake strudel with curd filling and berries for 45-50 minutes at 180 degrees. When the time is up, remove the baked goods from the oven and cool slightly. Next, sprinkle the top of the roll with powdered sugar and cut into portions.
