These thin pancake rolls will decorate any festive table. The pancakes themselves are prepared simply, in this recipe the filling is prepared from trout and curd cheese, but you can add other products to these rolls.

- For pancakes:
- - 500 ml of milk;
- - 200 g flour;
- - 50 g butter;
- - 4 eggs;
- - 1 teaspoon of sugar;
- - a pinch of salt.
- For filling:
- - 200 g of lightly salted trout;
- - 100 g of curd cheese;
- - 2 fresh cucumbers;
- - half a pod of red bell pepper;
- - 4 sprigs of parsley.
Instructions
Step 1
First you need to make the pancakes. To do this, beat the milk with eggs, salt, flour and sugar. Leave the dough in a warm place for 20 minutes. Pour in the cooled melted butter, stir again.
Step 2
Heat a frying pan, grease with oil (after the first pancake, grease is no longer required), bake thin pancakes from the entire amount of dough.
Step 3
Prepare the filling for the pancake rolls. Chop lightly salted trout finely, it is better to take fillets. Cut the bell pepper into small cubes, chop fresh parsley. Combine the fish with curd cheese, herbs and pepper. The filling is ready. Cut fresh cucumbers separately into long thin strips.
Step 4
Coat each pancake with the filling, put cucumber strips along one edge, roll tight rolls. If you have a bamboo mat for these purposes, it is very good, because it is much more convenient to prepare rolls from pancakes.
Step 5
Cool the finished rolls in the refrigerator, then cut them into small rolls about 3-4 centimeters high.
