Festive salad with red fish and caviar

The recipe for this salad is quite consistent with the level of a restaurant or good cooking, but it is enough to simply prepare such an appetizer at home, for example, for the 8th of March.

You will need:

- 1 ripe avocado;

- 2 eggs;

- 1/2 tbsp. olive oil;

- 1 tbsp. dijon mustard;

- 200 g of small shrimps;

- 2-3 pickled cucumbers;

- a bunch of dill;

- a few green lettuce leaves;

- 150 g smoked red fish, such as trout;

- 100 g of salmon caviar;

- 1 lemon;

- vinegar;

- salt and freshly ground black pepper.

Seafood lovers can add squid fillets or finely chopped octopus to this salad.

Peel the avocado, remove the pit and cut the flesh into cubes. Chop the pickled cucumbers, wash and chop the herbs. Boil the shrimps in boiling water for no more than 5 minutes, otherwise they will become tough. After that, peel them of their shells, remove the heads and tails, and chop the flesh. Break the eggs, separate the whites from the yolks. Boil the proteins in boiling salted water with the addition of vinegar. Grind the cooked proteins. Combine avocado, egg whites, shrimp, and herbs.

Prepare the sauce separately. Whisk the egg yolks with the mustard, then gradually add the olive oil to the mixture. Add some salt and juice from a quarter of lemon. Whisk the sauce until it turns white and smooth. Season with this sauce a mixture of shrimp and other foods. Wash the lettuce leaves and pat dry. Cut the red fish into thin plastics. The salad will be served in portions: put a leaf of green salad on each plate, on top - a portion of shrimp salad. Add some freshly ground pepper. Place 1-2 pieces of red fish on a plate nearby. Turkey with fruit sauce

This dish, quite simple to prepare, will decorate your festive menu and demonstrate the culinary skills of the hostess.

You will need:

- 400 g turkey breast with skin;

- 1 orange;

- half a lemon;

- 1 tbsp. white table wine;

- 1 tbsp. flour;

- vegetable oil;

- 1 tbsp. long grain rice;

- 20 g butter;

- salt and freshly ground black pepper.

Chicken will not work for this recipe. If you don't have turkey meat, it's best to opt for duck.

Juice the oranges and lemons. Grate the orange and lemon zest on a fine grater. Slice the turkey breast into plastics. Heat vegetable oil in a deep skillet. Fry the meat in it for 5 minutes until half cooked. Then pour wine, orange and lemon juice into the pan, salt and pepper. Simmer the bird for at least 15 minutes. 5 minutes before the end of cooking, add flour to the sauce and stir. This is necessary to make the sauce thicker.

While the turkey is cooking, tidy up the side dish. Pour rice into boiling water and cook for 15-20 minutes, stirring regularly. Then drain the water and season the cereal with butter. Serve the turkey on a pad of rice with a serving of fruit sauce.
