    • salt - about 0.5 kg

Step 1

Carefully select the lard for further processing. You can take frozen, but it is better if there is fresh bacon with a well-processed skin and a layer of meat. The selected bacon must be thoroughly washed and cut into pieces that are convenient for cooking, that is, so that they fit easily into the pan. Pieces of about 10x8 cm are ideal for even brining.

Step 2

Pour water into a saucepan and add salt in proportion to 1 liter of water - 100 grams of salt. After the brine boils, all prepared spices are added to it. In the classic recipe for making boiled bacon, bay leaves and black peppercorns are used as spices. The aroma and taste of lard can be varied somewhat by selecting the appropriate spices. In addition to bay leaf and pepper, you can add cloves, coriander, caraway seeds, dill and mustard seeds. Prepared pieces of bacon are immersed in a brine with spices. In this case, it is necessary to ensure that they are completely immersed in the brine. Cook over low heat for at least 40 minutes.

Then the pieces of bacon must be removed from the brine, lightly dried with a linen towel or napkin and, while still hot, sprinkle with a mixture of chopped garlic and ground black pepper. The spiced pieces of bacon should be wrapped in parchment paper and a tea towel until they cool completely. When the bacon has cooled, it must be unrolled and placed in the refrigerator.

You can also act differently. Let the boiled pieces of bacon cool in brine and only then take it out and cover with chopped garlic and ground pepper. Then wrap in foil and leave for some time, about three hours, soaked in spices.

Store boiled lard in the refrigerator. But it will be better if there is a place for him in the freezer. It is very convenient to cut frozen pieces into thin slices.
