Cottage cheese is an almost irreplaceable product for a modern person. It is nutritious, rich in useful, easily digestible protein, calcium, phosphorus and other substances the body needs for a healthy life. Use cottage cheese to make homemade glazed cheeses, hearty pita cake, or makeshift tiramisu.
Homemade glazed curds
Ingredients:
- 300 g of cottage cheese from 5% fat;
- 100 g of sugar;
- 1/3 tsp vanillin;
- 1 bar of dark or milk chocolate;
- vegetable oil.
Mash the cottage cheese with vanilla and sugar thoroughly. Melt the chocolate in any way, such as in a water bath or microwave. Take a cake pan, generously coat 2/3 of the chocolate mass with a cooking brush and freeze until set. Fill them with curd paste, cover with the remaining chocolate, which will have to be reheated, and refrigerate.
Lavash curd pie
Ingredients:
- 3 sheets of Armenian lavash;
- 500 g of cottage cheese;
- 100 g of hard cheese;
- 50 g of dill;
- 2 cloves of garlic;
- 200 ml of milk;
- 250 g sour cream;
- 50 g butter;
- 2 chicken eggs;
- 1/3 tsp ground black pepper;
- salt.
Cut the pita bread sheets into rectangles to fit your baking pan. Peel the garlic cloves and crush them in a special press, finely chop the herbs. Mash the cottage cheese with a fork, mix it well with garlic, dill, 3 tbsp. sour cream and salt to taste. Mix the milk with the remaining sour cream, add the eggs one at a time, pepper everything and salt.
Line the baking sheet with parchment and brush with melted butter. Assemble the layer cake according to the following scheme: dip a sheet of pita bread in the sour cream-egg mixture, hold in it for 5-10 seconds and place in a bowl, then evenly cover with a part of the filling. Continue until the curd runs out, then add the last "crust" and sprinkle generously with grated cheese. Make a pie
10-15 minutes at 180oC, until golden brown. Cool it slightly and cut into portions.
Curd dessert a la "Tiramisu"
Ingredients:
- 500 g of soft cottage cheese;
- 100 g biscuit cookies;
- 50 g sour cream;
- 50 g of natural yogurt;
- 150 g of sugar;
- 5 chicken eggs;
- 1/4 tsp almond extract;
- 250 ml of brewed or dissolved coffee;
- 50 ml of brandy;
- 2 tbsp. bitter cocoa powder.
Combine cottage cheese with sour cream and yogurt. Separate the yolks of the eggs from the whites, beat the first with sugar and add to the curd mass, rub the second until they are foamy and also mix into the base of the dessert. Pour the cognac and almond extract into the coffee. Soak biscuits in this liquid. Place half of them on the bottom of a glass round dish, spread 1/2 of the sweet curd on top. Repeat the last step. Tighten the dishes with cling film and refrigerate for at least 2 hours, preferably overnight. Take out the dessert and sprinkle it with cocoa powder through a fine sieve.
