Adjika is a traditional Abkhaz dish, which is a spicy sauce made from vegetables and spices. Adjika is translated from the Abkhaz language as "salt". Adjika is also a Georgian dish.
Preparation of food
To prepare adjika, you will need: 1.5 kg of zucchini, 900 g of tomatoes, 250 g of carrots, 250 g of bell pepper, 50 g of granulated sugar, 80 ml of table vinegar, 100 ml of sunflower oil, 1 tbsp. l. ground red pepper, 2 heads of garlic, 1 tbsp. l. salt.
Preparation
Prepare vegetables for cooking adjika. Wash and dry them. Peel the carrots and zucchini, cut the pepper into halves and remove the seeds from them. Grind all vegetables through a meat grinder or chop in a food processor, place in a large saucepan. Next, add the required amount of sunflower oil, granulated sugar and salt to the mass, mix the ingredients thoroughly.
Place the pot on the stove, turn on low heat. Cook the adjika for 45 minutes. Add table vinegar, chopped garlic and red pepper to the mass, cook for another 10 minutes.
Transfer adjika to sterilized dry jars, roll up with boiled lids. Turn the jars with adjika over and put on the lid, cover with a blanket or a warm towel on top, leave to cool completely.
Delicious homemade adjika is ready! You can serve it as a sauce for side dishes and main courses.
