In Soviet times, cod liver salad was called "Severny" and was served in the best restaurants in the country. Today, cod liver salad is a wonderful dish for both everyday and festive tables.
Cod liver salad
For the salad, you will need the following products:
- potatoes - 2 pcs.;
- onions - 1 pc.;
- green peas - 2 tbsp. l.;
- mayonnaise - for dressing;
- green onions, dill - optional.
Remove the cod liver from the jar and let the oil drain. You can also blot the liver with wet wipes to help remove excess fat. The resulting oil can be used to dress this salad.
Wash the potatoes and boil them in their skins. Also boil chicken eggs separately. Peel and cut the finished potatoes into small cubes. Peel and dice the eggs as well. The cod liver should be finely chopped.
Wash onions, peel and chop finely. Also prepare greens for the salad. Rinse the leeks and dill and chop finely.
Combine all prepared ingredients in a salad bowl, mix well, then add green peas and season the salad with mayonnaise to taste, do not forget to salt. Cod liver salad should be spread over lettuce leaves and served garnished with parsley and other herbs.
Cod and shrimp liver salad
A delicious and nutritious salad is obtained from cod liver and shrimp.
For cooking you will need:
- tiger shrimps - 10 pcs.;
- cod liver - 1 can;
- pickled cucumbers - 3 pcs.;
- chicken eggs - 2 pcs.;
- arugula - 1 bunch;
- mayonnaise - for dressing.
Rinse the tiger prawns, boil for about 5 minutes, peel and chop. Boil chicken eggs, peel and chop into small cubes. Cut the cod liver into pieces.
Put arugula on a plate, chopped shrimp on top, add a little mayonnaise, and then put the chicken eggs and the cod liver itself. The cucumbers, finely chopped, should be placed on top of the cod liver. Garnish the salad with a couple of shrimp and herbs.
