Braised liver with pickles

To prepare this dish, built on an unusual combination of liver and pickles, you will need the following ingredients (for 3-4 servings):

- 500 g of liver (beef, chicken, duck, turkey, goose);

- 100 g of pickled cucumbers;

- 100 g of onions;

- 100 g of carrots;

- 500 ml of milk;

- 2 tbsp. l. flour;

- vegetable oil;

- salt, pepper (to taste).

Keep in mind that cooking times will depend on which liver you use. Chicken, goose, turkey, and duck tend to cook faster. The liver prepared according to this recipe turns out to be very tender and practically melts in the mouth.

Initially, you need to prepare the liver: rinse thoroughly, remove films and various veins, and then cut into small pieces.

Peel and chop the onions, fry in a pan with vegetable oil until golden brown. Meanwhile, wash, peel the carrots and grate, add the carrots to the onions, fry.

Rinse pickles, chop and add to the pan, fry for a few minutes with the rest of the vegetables. Put the liver in a pan and fry, stirring constantly, do not forget to salt and pepper. After 5 minutes it is necessary to pour in milk so that it completely covers the liver. Place the lid on the pan and simmer for about 15 minutes.

To make the dish thick, it is necessary to add flour, which should be fried in advance without oil until golden caramel color. Continue simmering for 10-15 minutes. The stewed liver with pickles is ready, it can be served hot with various side dishes.

Liver salad with cucumbers

A delicious and satisfying salad of liver and cucumbers is obtained, for the preparation of which you will need:

- 150 chicken liver;

- green onions - 1 bunch;

- fresh cucumbers - 3-4 pcs.;

- eggs - 3 pcs.;

- 1 tsp lemon juice;

- mustard, sauce (to taste);

- vegetable oil;

- salt, sugar (to taste).

Boil the chicken liver in lightly salted water for about 20 minutes, which must be soaked in milk for 25-30 minutes. Soaking the liver is necessary to make sure it doesn't taste bitter in the salad. Then drain the water and dry the liver itself.

Rinse fresh cucumbers, peel and cut into strips. In the event that you have large cucumbers with seeds, it is better to remove the seeds. Rinse green onions and chop finely. Boil hard-boiled eggs, then peel and cut into cubes.

For the salad, you need to prepare the sauce. In a blender, combine raw yolk, any sweet and sour sauce, lemon juice, salt and sugar, beat, then pour in 1 tbsp. l. vegetable oil and beat again. This will create a thick, yellow sauce that looks like regular mayonnaise.
