Pizza is a favorite of many Italian cuisine. The main secret of a delicious pizza is spicy fillings with cheese as an obligatory component. But no less important is the dough. It can be yeast-free or yeast-free in pizza.
Yeast pizza dough
It is customary to make a classic pizza dough from wheat flour mixed in equal proportions and durum, that is, coarse flour containing a large amount of active microelements and vitamins. Other ingredients in the dough are yeast, olive oil, salt and water. Instead of water, you can use milk, and vegetable oil - butter, then the pizza dough will turn out to be more rich, juicy and fluffy.
To make yeast pizza dough you will need:
- 250 g flour;
- 1 tsp dry yeast;
- 30 ml of milk;
- 30 ml of water;
- 1 tbsp. l. olive oil;
- ¼ h. L. salt.
Put milk on fire and bring to a boil. Then remove from heat and cool to room temperature. Then pour it into a large container and add warm boiled water, salt and dry yeast. Pour in the pre-sifted flour and mix everything well. Then add olive oil to the bowl with the dough and knead the dough thoroughly for 10 minutes. Then cover the dishes with cling film and place in a warm place for 40 minutes. If the dough is not very elastic, add more olive oil. Knead the pizza dough and place on a floured work surface. Take a round baking dish and brush it with olive oil. Knead the dough again and roll it out with a rolling pin into a thin tortilla, the same diameter as the baking dish. Then transfer the cake to a mold and press lightly with your fingers to the surface. Then adjust the base of the pizza to size and make small sides, bending the dough from the edges inward.
Yeast-free pizza dough
The yeast-free dough on kefir is juicy, lush and tasty. Although its composition is far from the "classic canons", yeast-free kefir dough is also widely used for making pizza base. In addition, such a dough is prepared much faster than yeast dough and saves time for the hostess.
To make a yeast-free pizza dough, you will need:
- 1 kg of wheat flour;
- 500 ml of kefir;
- 1 tsp salt;
- ½ tsp. soda.
Pour kefir into a large deep container. Then add the rest of the ingredients: pre-sifted flour, baking soda and salt. Mix everything thoroughly and form a base cake from the resulting dough.
If you add baked goods to a yeast-free dough, it will turn out to be more fluffy. To prepare such a test, you need to take:
- 250 g wheat flour;
- 180 ml of kefir;
- 50 g margarine;
- 1 egg;
- soda;
- salt.
Cut the margarine into small pieces and combine with kefir, egg and sifted wheat flour. Then mix everything well. Take some baking soda (literally on the tip of a knife) and add to the mass. Knead the dough thoroughly. Then roll it into a ball and place it in the refrigerator for half an hour. After expiration, remove the chilled dough and form a pizza base.
