Risotto refers to Italian cuisine and is made from rice. It is served both as a separate dish and as a side dish, for example, for fish. Due to the presence of a variety of vegetables, risotto is rich in vitamins, fiber and nutrients. Its use helps to cleanse the body. Therefore, it will be especially useful for those on a diet. And even during the fast, such a dish will be a good help.
It is necessary
- - round grain rice - 200 g;
- - broth or water - 300 ml;
- - large carrots - 1 pc.;
- - tomatoes - 2 pcs.;
- - large red onions (or onions) - 1 pc.;
- - broccoli - 100 g or cauliflower - several inflorescences;
- - green peas (you can take frozen) - 100 g;
- - green beans - 150 g;
- - garlic cloves - 2-3 pcs.;
- - dry white wine - 80 ml;
- - vegetable oil (it is better to take olive oil) - 3 tbsp. l.
- - butter - 30 g;
- - ground black pepper;
- - salt;
- - parsley or green basil - a few sprigs (optional);
- - a deep, thick-walled pan with a lid.
Instructions
Step 1
One of the specialties of risotto is that you do not need to rinse the rice for this dish. This way it retains the starch needed for a viscous consistency.
Step 2
First of all, peel the red onion and garlic and chop into small pieces. Then take a frying pan, pour vegetable oil into it, heat it well. Add the butter, melt it, and then add the chopped onion and fry until golden brown. Then add the garlic and fry with the onions for about 1 minute.
Step 3
In the meantime, peel the carrots, cut into small cubes, put in a pan and fry until half cooked.
Step 4
Now it is the turn of the rice. Pour it over onions, carrots and garlic (it must certainly be dry), mix with vegetables and fry so that each rice is covered with oil. So the cereal will fully absorb the whole aroma of vegetables.
Step 5
As soon as the rice is fried, pour in the white wine, bring to a boil and, stirring vigorously, fry until all the liquid is melted from the pan.
Step 6
Place the tomatoes in a cup, make 2-3 cuts on them, pour boiling water to the top and leave for a minute. After that, drain the hot water, cool the tomatoes under cold running water and remove the skin. Then cut them into small cubes and add to the skillet with rice and vegetables.
Step 7
Now put in the green peas. And then pour boiling water or broth into the pan. Reduce the temperature to a low setting, cover and simmer for 10 minutes.
Step 8
When the time is up, add broccoli and green beans, and salt and black pepper to taste. Stir everything together and continue simmering for another 10 minutes. Risotto with vegetables is ready! Remove the pan from the stove. The dish can be served immediately, garnishing each portion with parsley or basil leaves.
