It serves as a rich source of protein, and in combination with a high-calorie avocado, which is high in vitamins and minerals that are beneficial for health, it can make a complete lunch or dinner.

It is necessary

    • 1 chicken breast;
    • 1 avocado
    • 1 orange or 2-3 tangerines;
    • 2 red onions;
    • 3 tablespoons lemon juice;
    • 3 tbsp olive oil;
    • salt;
    • sugar;
    • ground black pepper.
    • Cayenne pepper;
    • parsley for decoration.

Step 1

To make an avocado chicken salad, prepare the chicken meat first. Remove the skin from the chicken breast, separate it from the bones, rinse in running water, pat dry with a paper towel. Boil the meat in salted water for 25-30 minutes after boiling. Remove chicken from broth, cool and cut into strips or cubes.

Chicken meat for salad can be prepared in another way: cut the fillets into cubes, fry in vegetable oil until golden brown, put on a paper towel to remove the remaining fat, and cool.

Wash the avocado, cut it in half lengthwise and remove the pit. Separate the flesh from the rind, cut it into 5 mm slices, place in a bowl, and so that it does not darken, pour 2 tbsp. lemon juice.

Step 4

Rinse the orange or tangerines, peel and divide into wedges, and the tangerines can be left intact, and it is better to cut the orange into 2 or 3 parts.

Step 5

Peel the red onion and cut into half rings. It is perfectly acceptable to use other varieties (onions, leeks, etc.), but it is red that gives the salad the necessary contrast.

Step 6

Next, prepare the sauce. In a bowl, combine the olive oil, 1 tbsp. lemon juice, 1/2 tsp. salt, one pinch each of sugar, black pepper and cayenne pepper.

Step 7

Put the chicken fillet, avocado, oranges or tangerines, onions in a bowl, stir and top with the sauce. Serve the salad in portioned glasses or salad bowls, garnished with parsley sprigs on top.
