It is necessary

  • - 1 medium onion;
  • - 2 cloves of garlic;
  • - 1 sprig of thyme;
  • - 1 tablespoon chopped parsley (with a slide);
  • - 0.5 kg of fresh tomatoes;
  • - 4 tablespoons olive oil;
  • - 6 pcs. sweet green pepper;
  • - 0.5 glasses of red wine;
  • - 1 tbsp. flour;
  • - 6 pcs. juniper berries.

Instructions

Step 1

Peel the onion head, wash and chop finely. Divide the chopped onion into two equal parts. Peel the garlic and pass through a press. Finely chop the thyme and place in a separate bowl with the garlic.

Step 2

Preheat a skillet and pour a small amount of oil into it (if you don't have olive oil on hand, replace it with refined sunflower oil). Place half the chopped onion, thyme, and pressed garlic into the skillet. Fry everything over medium heat for 3-4 minutes.

Step 3

Scald the tomatoes with boiling water, remove the skin and chop finely. Add the chopped tomatoes to the onion and garlic skillet, then add the juniper berries to the skillet. Season with salt and simmer for about 20 minutes.

Step 4

Simmer the remaining half of the onion separately with the addition of olive oil over low heat. Peel the seeds from the pepper, chop finely and add to the pan with onions. Simmer for another 10 minutes, then add a small amount of flour and stir well so that there are no lumps in the sauce. Pour in the wine and simmer with the lid open until the contents of the pan are reduced by three times.

Step 5

Combine the tomato sauce with the onion mixture, chop everything in a blender, add the chopped parsley and cook for five minutes. A fragrant homemade sauce for meat is ready.
