Step 1

Frozen squid carcasses with skin are first thawed in cold running water. Then we remove the chitinous plates and immerse them in water heated to 65oC for four minutes. Remove the skin with a brush and rinse very well, then put the fillet in boiling water, pre-salted, and cook for 6 minutes after the water boils.
