Cake "Kievan Rus" is a dish of Ukrainian cuisine. The delicacy sinks into the soul for many years. It tastes incredible. It is impossible to stop eating this delicious cake. Consists of meringues and is impregnated with the most delicate cream.
It is necessary
- - 7 eggs
- - 500 g granulated sugar
- - 4 tbsp. l. starch
- - 2 tsp cocoa powder
- - 250 g of nuts
- - 200 ml of milk
- - 300 g butter
- - a pinch of salt
Instructions
Step 1
Make a meringue cake. Beat the whites with a mixer and add a pinch of salt, beat until firm foam. Add granulated sugar in a thin stream and beat until sugar is completely dissolved.
Step 2
Dry the nuts in a dry skillet. Grind them into coarse crumbs and add them to the meringue. Add starch and mix everything well until smooth. Divide the dough into 2 equal pieces.
Step 3
Line a baking sheet with baking paper, pour in the dough and smooth over the surface. Preheat the oven to 180 degrees, place the meringue and bake for about 2-2.5 hours until golden brown. Bake this way 1 more time.
Step 4
Prepare the cream. Mix yolks, 200 g granulated sugar and milk, put on low heat and bring to a boil. Remove from heat and cool. Beat the butter with a mixer and add to the cream mixture, stir until smooth. Cover with plastic wrap and place in a cool place.
Step 5
Remove the meringue from the oven and leave to cool. Attach the dish and cut out an even circle.
Step 6
Put the cake on a dish, brush with white cream, cover with the second cake, mix the cream with 1 tsp. cocoa powder and brush with dark cream. Lubricate the top and sides of the cake.
Step 7
Sprinkle chopped nuts on the cake. Place in a cool place for 8-10 hours.
