Currently, not every housewife can boast that she knows how to make homemade kvass, because it is much easier to buy it in a store. Meanwhile, the advantage of this refreshing drink in the heat is undeniable. Okroshka seasoned with homemade kvass will turn out amazing.
Ingredients for kvass:
- Water - 3 liters;
- Wet yeast - a small piece;
- Sugar - 3 tablespoons;
- Bread kvass - 3 tablespoons;
- Brown bread crust;
- Raisins or horseradish - for sharpness.
Ingredients for okroshka:
- Potatoes - 5 tubers;
- Chicken egg - 5 pcs.;
- Cucumbers - 2 pcs;
- Boiled sausage - 200 g;
- Dill - ½ bunch.
- Green onions - ½ bunch.
Preparation:
- In order to make kvass, you first need to make a sourdough. Dissolve yeast in a glass of water, add a little sugar (about a teaspoon) and refrigerate for a day. Then drain the water and dilute with fresh water, this will get rid of the yeast odor. Add bread kvass, mix and leave to ferment, also for about a day.
- When the leaven is ready, you can go directly to the kvass preparation procedure. Pour sugar into a three-liter jar, if you need a sweeter drink - you can add more sugar. Add grated horseradish, ready-made sourdough and 3 tablespoons of dry kvass to the sugar. For a rich color, put brown bread dried to a dark color in a jar.
- Pour everything with warm water, mix, close the lid and put the jar with kvass in a bright place until tender. Kvass is ready when it stops playing, that is, blowing bubbles. The finished kvass must be filtered and refrigerated. To put the next can of kvass, sugar and dry kvass are simply added to the leaven that remains from the finished drink.
- For okroshka, boil and peel potatoes and eggs. Then cut the potatoes, eggs, boiled sausage and fresh cucumbers into small cubes. Chop the dill and green onions with a knife. Mix all products and salt.
- Put okroshechny mixture in each plate and pour chilled kvass. Serve with sour cream on the hottest days.
