Step 1

For duck soup with homemade noodles, both broiler and country poultry are suitable. In broiler ducks, the meat is softer, closer to chicken in taste, and broiler soup is prepared faster. Country birds are larger, fatter, with yellowish skin. Duck broths and soups are more aromatic and rich. If you bought a duck for the soup in a store (broiler), then defrost it before cooking, then rinse it well, gut it and cut it into portions.

Put pieces of duck in a saucepan, cover with cold water, put on low heat. When the broth boils, skim off the foam, add salt and cover the pan with a lid. The broth should simmer for about forty minutes.

For homemade noodles, sprinkle flour on a clean table or cutting board. Make a well in the flour and pour the egg into it. Then adding a little cold water, knead the hard dough. Roll out the dough thinly with a rolling pin, sprinkle with flour on top and cut into strips 5 centimeters wide. Fold the dough strips in several rows and cut finely lengthwise. You should get noodles 5 centimeters long and 0.5 centimeters wide. Then place the strips in one layer on a sieve and sift out any excess flour. The noodles are ready for cooking.

Wash the carrots and potatoes well, peel, cut into cubes and add to the duck broth. Peel the onion and cut into thin half rings. When the duck has boiled for about 10 minutes with potatoes and carrots, put onions in a saucepan and add spices. For duck soup, bay leaves and different types of peppercorns are best suited: black, white.

Step 5

Add a handful of homemade noodles to the soup and stir well to prevent the noodles from sticking to the bottom of the pot. Cook for another 15-20 minutes.

Step 6

Wash, dry and finely chop the parsley and green onions. When the duck soup is done, sprinkle with herbs on top.
