One of the easiest and quickest dishes to prepare is an omelet. Lightly beaten eggs and a skillet are what you need for a classic French omelet. Add the fried potatoes and onions and you have a Spanish omelette ready. Add cheese, vegetables or pasta and you have an Italian omelet. Pour soy sauce and rice wine into the egg mass and you are already making a Japanese omelet. So, everything is in order.

- Soy sauce - 1 tablespoon
- Rice wine (sake) or rice vinegar - 1 teaspoon
- Sugar - 1 teaspoon
- Vegetable oil - 1 - 2 tablespoons
Instructions
Step 1
Take the Japanese omelet pan. A large, rectangular skillet works best. If not, take an ordinary round one with low sides and a Teflon coating.
Step 2
Toss the eggs gently. Better to take a fork or sushi chopsticks. Do not whisk! There should be no bubbles in the egg mixture.
Step 3
Add prepared ingredients to the egg mixture: soy sauce, rice wine and sugar. Mix thoroughly. The sugar should dissolve.
Step 4
Grease a skillet with vegetable oil and heat over low heat.
Step 5
Pour 1/3 of the egg mixture into the pan and spread evenly over the pan. If bubbles form, the pan is very hot. Reduce the temperature of the hotplate. Pierce the bubbles with a toothpick.
Step 6
When the omelet has set, gently roll the opposite ends of the egg pancake towards the center with a wooden spatula or sushi chopsticks. Then fold the roll in half and slide to the edge of the pan.
Step 7
Oil the skillet again. Pour half of the remaining egg mixture into the skillet. Use a spatula to lift the roll up so that the mixture flows slightly under it.
Step 8
When the eggs set, wrap the first pancake in the second. Move the resulting roll to the edge of the pan.
Step 9
Grease the skillet with vegetable oil again. Pour the remaining egg mixture into the skillet. Remember to lift the roll up so that the last pancake sticks to the other two.
Step 10
Wrap the roll in a grabbed pancake. Fry the roll on both sides for 10 seconds.

Remove the finished egg roll from the pan and let cool.
Step 12
Cut the roll into portions. Place the omelet on a plate. Garnish with ginger and wasabi. Serve with soy sauce. Japanese omelet can also be used as a base for rolls and sushi. Bon Appetit.
