If you observe an Orthodox fast or prefer low-fat first courses, then you will surely enjoy lentil soup.
To make Fakese Lentil Soup, you will need the following ingredients:
- brown lentils - 200 g;
- olive oil - a quarter of Art. l.;
- large carrots - 1 pc.;
- onion - 1 pc.;
- minced garlic (can be dried) - 1 tbsp. l.;
- dried rosemary and oregano - 1 pinch each;
- bay leaf - 2 pcs.;
- tomato paste - 1 tbsp. l.;
- salt and ground pepper to taste;
- water - 1 l.
Add lentils to a large saucepan. Now fill it with water. The liquid should be 3 cm higher than the legumes. Put the saucepan on gas and bring the lentils to a boil, cook for 10 minutes, and then discard in a colander.
Now pour olive oil into a saucepan and place over medium heat. When the oil warms up a little, add there garlic, onion, previously peeled and finely chopped, carrots, chopped on a grater. Simmer the vegetables for 5-7 minutes, until the onions are soft and translucent. Remember to stir the vegetables as you cook to prevent them from sticking to the bottom of the pot.
Now add lentils to the cooking bowl, pour in a liter of water, add seasonings: oregano, rosemary and bay leaf. Bring food to a boil and reduce heat to low. Now cover the pan with a lid, cook for 10 minutes. Then add the tomato paste, salt and pepper to the lentil soup. Mix everything. Place the lid back on the pot. Cook until lentils are tender, about 30-40 minutes in duration.
It is recommended to eat lentil soup warm. By the way, a little advice. If your first course becomes too thick after standing for a while, you can simply add water to it and boil it.
