Fresh birch sap can be stored for no more than two weeks. To extend the life of the drink, you can make kvass with raisins and dried fruits. Delicious, healthy and refreshing.

It is necessary

  • - 3 liters of birch sap,
  • - 0, 6 or 0, 8 kg of dried fruit (to taste),
  • - 200 grams of raisins.

Instructions

Step 1

Clean the juice from various impurities. You can skip through two or three layers of gauze (here already see if you wish and possibilities). The juice can be filtered through a fine sieve. Leave the strained juice in a cool place for a day. It is advisable to leave birch sap in a glass jar.

Step 2

Rinse the raisins. Rinse dried fruits and remove specks. Dried fruits can be sorted out dry, it's easier. It is advisable to soak the raisins in boiling water (optional).

Step 3

Put raisins and dried fruits in a jar with juice, you can use any convenient container (a 5 liter plastic bottle is best). Place the lid on the jar or bottle.

Step 4

Put the kvass in a warm place (you can wrap it in a towel) for about seven days. Since there is no granulated sugar in kvass, it will ferment much slower. If desired, you can add three tablespoons of sugar (to ferment faster), but in this case, the kvass will lose its sweetness from the birch sap.

Step 5

Strain the finished kvass several times through cheesecloth and pour into small glass containers. It is best to store kvass in a cellar, no more than six months, since then it will begin to sour. Consume chilled.
