"Lemon strip" is a delicious treat for tea or coffee. It is prepared simply and quickly, especially if you use modern technical means - a food processor, mixer or blender.

How to cook
How to cook

It is necessary

  • For the test:
  • - 200 g of butter;
  • - 200 g sour cream 15-20%;
  • - 2-2.5 cups flour.
  • For filling:
  • - 1 lemon;
  • - 2 cups granulated sugar.

Instructions

Step 1

Dough preparation

Remove the butter from the refrigerator one hour before cooking to soften it. Put butter, sour cream and flour into the bowl of a food processor with a dough attachment, turn on the food processor and knead the dough - it should come off the walls of the bowl. If the dough is not thick enough, add a little flour. Instead of a food processor, you can use a mixer with spiral dough attachments, or simply knead the dough with your hands. Shape the dough into a ball, sprinkle with flour and refrigerate for 1 hour.

Step 2

Preparation of the filling

Wash the lemon, cut off the stalk, and then, together with the peel, cut it into small pieces, while choosing the seeds. Next, grind the lemon to puree using a blender or food processor. Alternatively, grate a whole lemon on the finest grater. Pour all the sugar into the resulting puree and mix the mass thoroughly.

Step 3

Remove the dough from the refrigerator, divide into three equal parts. Roll each piece on a floured table into a rectangle about 20 cm wide and 3 mm thick. Each rectangle is visually divided in length into three equal parts. Place 1/3 of the lemon filling on the imaginary central part of each rectangle, distribute it evenly. Then cover the filling with the side parts: first from one side, then from the other. Tuck the end edges up and pinch so that the filling does not leak out. Carefully transfer three rectangular envelopes to a baking sheet and place in an oven preheated to 200 degrees. Bake for 20-25 minutes until golden brown. Since the dough contains a lot of fat, the baking sheet does not need to be greased, and neither does the baking surface.

Step 4

Immediately remove the finished strip from the baking sheet and transfer to a wooden board to cool. Cut into small squares, rhombuses or rectangles. "Lemon strip" is ready!
