The buffet is convenient if you invite a large number of guests and want to give them the opportunity to communicate freely with each other. Salad baskets

This dish is well suited for a buffet table. The salad is served in small portions, which are convenient to take without getting your hands dirty. The recipe is easy to change according to your own taste - the baskets can be stuffed with any salad.

You will need:

- 100 g of butter;

- 300 g flour;

- 3 eggs;

- 50 g of sugar;

- 1 potato;

- 1 pickled cucumber;

- 200 doctoral sausages;

- 100 g of green peas;

- 200 g chicken breast;

- 150 g of emmental cheese;

- mayonnaise to taste.

If you love delicious sauces, make your own mayonnaise using egg yolks, olive oil, and mustard. But keep in mind that such a sauce must be used quickly, preferably on the same day.

Remove the oil from the refrigerator beforehand so that it softens. Cut it into pieces and mix with flour. Break two eggs into the dough, add sugar and knead the dough. It should be dense and uniform. Put the shortbread dough in the refrigerator for an hour. Take out the sand basket tins, wash, dry and brush with a little oil.

Roll out the finished dough on a table or cutting board sprinkled with flour. Cut out circles from the dough that fit the baking dish. Place the dough in the tins, spreading it over the bottom and sides with your fingers. Preheat the oven to 180 ° C and bake the baskets in it for about 20 minutes. The dough should brown. Immediately remove the finished baskets from the molds and cool slightly.

Go for salads. Boil potatoes, egg and chicken breast. Cool and peel potatoes and eggs, cut into cubes. Chop the pickled cucumber and sausage. Mix these ingredients with green peas and mayonnaise. Fold the chopped chicken and grated cheese into a separate container. Season this mixture with mayonnaise as well. Fill half of the baskets with one salad, half with the other. Arrange the items on a platter and serve.

Butter pies

Pies are one of the most suitable appetizers for a buffet table. You can include them both in the main and in the dessert menu by preparing pies with different fillings.

You will need:

- 1 tbsp. milk;

- 80 g of butter;

- 1, 5 cups sugar;

- 2 eggs;

- flour;

- a bag of dry yeast;

- 1/2 tsp salt;

- 200 g of beef;

- 200 g of pork;

- 1 small onion;

- 400 g of apples;

- vegetable oil.

You can also add cinnamon to apple patties.

Start making patties with dough. Heat the milk without boiling. Pour it into a deep bowl, add 3 tablespoons there. sugar and yeast, stir and let stand for 10-15 minutes. Meanwhile, melt the butter and pour it over the milk. Break eggs there and add salt. Stir the future dough. Start gradually adding flour to the mixture, stirring constantly so that no lumps form. As a result, the dough should turn out to be dense, but at the same time plastic. Cover the container with a lid or towel and leave in a warm place for two hours. Stir the dough after an hour if it has already started to rise.

While the dough is rising, prepare the fillings. Wash the meat, remove the veins and films. Scroll it through a meat grinder along with the peeled onion. Season the minced meat. Heat vegetable oil in a skillet and fry the minced meat in it until tender. For sweet pies, peel and slice the apples. Remove the dough, form small balls out of it. Roll each of them and fill with either a sweet or meat filling. Add 1-2 tsp to sweet pies with apples. Sahara. Fry the pies until tender in vegetable oil. Serve warm.
