"Lift me up" - this is how the tiramisu dessert sounds literally in Russian. Thanks to the combination of coffee and chocolate in this light Italian cake, it has earned the reputation of a "love treat".

It is necessary

    • For the savoyardi:
    • - 3 eggs;
    • - 100 g of sugar;
    • - 100 g flour;
    • - 20 g butter;
    • - 30 g of icing sugar;
    • - a pinch of salt.
    • For tiramisu:
    • - 4 eggs;
    • - 500 g mascarpone cheese;
    • - 100 g of sugar;
    • - 250 ml of coffee;
    • - 250 g savoyardi;
    • - 1, 5 Art. spoons of brandy;
    • - 3 tablespoons of cocoa powder.

Instructions

Step 1

First of all, prepare savoyardi or as it is also called ladies' sticks - this is an indispensable component of tiramisu. Separate the yolks from the whites. Whisk the whites into a strong foam. Mix the yolks and 75 g of sugar thoroughly, gradually add 75 g of flour, sifted through a sieve, and salt. Gently add the whipped egg whites to the dough with a spoon and stir gently. The dough should be thick and fluffy.

Step 2

Grease a baking sheet with butter and lightly dust with flour. Fill a pastry syringe with a hole diameter of about 15 mm. Squeeze sticks 10 cm long from it onto a baking sheet. If there is no pastry syringe, then use a regular plastic bag, cutting off a corner from it.

Step 3

Combine the remaining sugar and icing sugar. Sprinkle half of the sugar mixture on the sticks and let sit for 10 minutes to dissolve the sugar. Then sprinkle the cookies with the other half of the sugar. After 2 minutes, place the baking sheet in an oven preheated to 150 C. Bake the Savoyards until golden brown. Leave the finished cookies to cool and dry on the table for about 5 - 8 hours.

Step 4

Start cooking tiramisu. Separate the whites from the yolks. Whisk the yolks and sugar until smooth. Add a pinch of salt to the whites and beat until they turn into a thick mass. Add the mascarpone to the yolk mass and stir with a spoon. Then stir in the whipped egg whites.

Step 5

Boil coffee, add sugar to it and cool. Pour brandy into cold coffee. Prepare crockery, preferably rectangular with high sides. Dip each cookie in coffee and lay out the first layer of the soaked cookie. Place half of the cream on top. Then lay out the biscuits again and cover with the remaining cream. Refrigerate the cake for 5 to 10 hours. Sprinkle the finished tiramisu with cocoa powder and cut into pieces.
