Who among us does not like to pamper a family with lightly salted herring with boiled potatoes? I think not many. But in addition to traditional fish with onions and oil, you can make rolls from herring, which will become not just food, but a real decoration of the table.

Herring rolls with herbs and olives

You will need:

- herring - 2 pcs;

- processed cheese from a jar - 3-4 tbsp. with a slide;

- greens - 1 tbsp;

- olives - 6-8 pcs;

- seasoning for fish;

- cling film.

Peel the lightly salted herring, cut along the back and carefully remove the ridge and bones. Next, we cut the abdomen, remove the bones from it. Put cling film on the table and spread the fillets on it so that the herring belly overlaps slightly. Cover with cling film and beat a little with a meat hammer. This must be done very carefully so as not to damage the fillet. We remove the top film. In this way, herring preparations are made for all subsequent recipes.

Lubricate the fish fillet with cream cheese, sprinkle with seasoning and chopped herbs. Finely chop the olives and put on the greens. We roll up a tight roll starting from the tail and wrap it tightly with cling film. We put it in the freezer for 1-2 hours, take it out, carefully unfold the film and cut it into portioned rolls. Serve chilled on the table.

Rolls with fresh cucumber

- herring 1-2 pcs;

- fresh cucumber 1-2 pcs;

- cream cheese - 100 g.

Prepare herring fillets in the same way as in the previous recipe, grease it with cream cheese. Cut the cucumber into very thin strips and place it on the cheese. We roll the fish into a roll (on the long side), wrap it in cling film and place it in the freezer for 1 hour. Remove the film from the finished roll and cut it into portioned rolls.

Rolls with bell pepper and pickled cucumber

- herring 1 pc;

- Bulgarian pepper - 1/2 pc;

- pickled cucumber (pickled) - 1 pc;

- butter 80-100 g;

- cling film.

Grease the finished herring fillet with butter (it is better if it is slightly melted). Cut the cucumber and bell pepper into small cubes. Put the vegetables on the butter and roll them up. Place in the freezer for 1-2 hours. Carefully unfold the film and cut it into rolls. It is better to take pepper in bright colors: red, yellow or orange, so that there is a contrast with the cucumber.

Rolls can be served as a separate dish, or canapes can be made by placing them on pieces of toasted bread.
