The generous mushroom season has passed away, and now the housewives can successfully use the gifts of the forest harvested for the future - dried or frozen mushrooms. An interesting find for a home menu can be buckwheat porridge zrazy with mushrooms and sour cream sauce.

It is necessary

  • - 300 g of buckwheat
  • - 50 g dried or 300 g fresh mushrooms
  • - 1 egg
  • - 1 onion
  • - 3 tbsp. tablespoons of butter
  • - 200 g of mushroom broth
  • - 3 tbsp. tablespoons of bread crumbs
  • - flour
  • - vegetable oil
  • For sour cream sauce you need:
  • - 3 tbsp. tablespoons of butter
  • - 2 large onions
  • - 0.5 cups sour cream
  • - 200 g of mushroom broth
  • - 1 tbsp. a spoonful of flour
  • - 1 tsp lemon juice
  • - spices: salt, a pinch of sugar, black pepper.

Instructions

Step 1

Soak dried mushrooms for several hours or overnight. Boil mushrooms until soft for about 1 hour and chop finely. Do not drain the broth, it will be required in the future.

Step 2

Dismantle the buckwheat, rinse and cook in mushroom broth. Salt and cook the porridge until crumbly, after which it must be cooled.

Step 3

Drive an egg into the cold porridge. Add enough flour to form a viscous mass. Mix everything thoroughly.

Step 4

Peel the onion, chop finely and fry in butter for a few minutes. Add mushrooms to the onion, season with salt, pepper and fry for a couple of minutes.

Step 5

Form round cakes from the buckwheat mass, put the prepared mushroom filling on each of them and pinch the edges, giving the products a zraz shape. Roll in breadcrumbs and fry the zrazy in a preheated pan in vegetable oil.

Step 6

To prepare the sauce, peel the onion, chop finely and fry for a few minutes in butter until golden brown.

Step 7

Put the fried onions in the mushroom broth, add sugar, salt, pepper and lemon juice. Simmer until the onion is ready, then pour in the sour cream, mix and cook everything together for another couple of minutes.

Step 8

To thicken the sauce, dilute a tablespoon of flour in a small amount of cold boiled water, mix thoroughly so that there are no lumps left. Pour into the total mass gradually, with constant stirring, achieving the desired degree of density.

Step 9

Preheat oven to 180 degrees. Put the zrazy in a special form, pour over the sauce and bake in the oven for 15 minutes.
