Double meringue cake turns out to be very delicate and fragile. You can decorate the finished treat with nuts. But soon summer is approaching - the time for fruits and berries, so it will be appropriate to decorate the cakes with fresh berries, they will add juiciness and sourness to the finished cake.

It is necessary

  • For six cakes:
  • - 120 g sugar or powdered sugar;
  • - 2 egg whites;
  • - vanillin;
  • - hazelnuts or berries for decoration.

Instructions

Step 1

Combine the egg whites, sugar and vanilla in a bowl. Place the bowl in a water bath and beat with a mixer on high speed for 7 minutes. You will get a very dense and thick mass, it should not fall from an inverted spoon.

Step 2

Transfer the protein mass to a pastry bag, then squeeze out small meringues on a baking sheet covered with parchment. The mass should go 2/3 of the part, leave the rest as a cream.

Step 3

Bake the meringues in the oven at 100 degrees. This will take 1-2 hours.

Step 4

On a half meringue, place a small amount of the cream from the same bag. Cover with a second half. This makes six cakes.

Step 5

Chop the nuts. If you have chosen berries as decoration, then rinse them.

Step 6

Sprinkle nuts on all sides of the cakes, or top with fresh raspberries, blackberries, or currants.

Step 7

Put some more cream on top of each cake, decorate the top with a whole hazelnut or berry.
