Salmon with martini sauce has a spicy and very unusual taste. The main feature of this dish is the dressing made with vermouth and black pepper.

- - 400 g fresh spinach
- - salt
- - ground black pepper
- - black peppercorns
- - olive oil
- - 200 g cherry tomatoes
- - 700 g salmon fillet
- - shallot
- - Bay leaf
- - 80 ml martini (vermouth)
- - 60 ml fish broth
- - 200 g cream

Step 1
Rinse the spinach and remove all stems. Put chopped onion, black peppercorns, bay leaf in a frying pan with olive oil and cover with fish broth. After 10 minutes, add the cream and vermouth (martini) to the contents of the pan. Simmer the ingredients for another 10 minutes.
Step 2
Fry the spinach and cherry tomatoes, cut in half, in olive oil. Fry the salmon fillets in a separate skillet or in the remaining oil until golden brown. Season the fish with salt and pepper to taste.
Step 3
On a plate, first place the spinach and cherry tomato garnish, then the salmon fillet. Season the dish with martini sauce. When serving, you can garnish the delicacy with mint sprigs or finely chopped green onions.
