    • 500 g flour;
    • 250 ml of water;
    • 400 g butter;
    • a pinch of salt and pepper;
    • 200 g of red fish;
    • 100 g of rice;
    • 1 onion;
    • 2 eggs;
    • 200 g of mushrooms.

Step 1

Prepare the dough. Pour flour into a bowl and pour in a glass of water and 100 g of melted butter. Add salt. Stir to avoid lumps. Wrap the mass in plastic wrap and refrigerate for an hour.

Then remove and roll into a rectangle, sprinkle with flour. Spread the remaining cooled oil over the formation. Roll it up so it is almost square. Roll it out.

Repeat this cooling-rolling process at least four more times. If you're short on time, buy ready-made puff pastry. The main thing is that it is not intended for baking (a lot of sugar), but for unleavened baked goods.

Take care of the stuffing. Chop the onion finely and fry it in vegetable oil in a preheated skillet for 5 minutes. Then chop the mushrooms, preferably champignons, and cook for about 5-7 minutes as well. Boil rice in salted water. You can take any variety, as long as it is polished.

Mix rice, onion and mushrooms, you can also add a finely chopped boiled egg to the minced meat. Season with salt and pepper. Prepare the fish. Cut it into thin plastics, but do not mix with the rest of the filling.

Take out the finished puff pastry, divide into two parts. Roll them out quite thinly. Place one of the layers on a greased baking sheet. Spread the filling of mushrooms, rice and other ingredients over it. Then place the fish plastics on top. They should cover the entire filling. Cover the cake with a second layer of dough, pinch the edges. Punch a hole in the cake for steam to escape. Brush the surface of the cake with whipped yolk for a golden brown crust. Bake the pie in an oven preheated to 180 degrees until tender. Serve warm.
