Meatball soup is quick and easy to prepare. This is a hearty and healthy soup. Meatballs are made from any type of meat. The easiest and most delicious recipe is from beef with potatoes and rice.
Soup Ingredients:
- 5 medium potatoes
- beef meat 400 grams
- flour 50 grams
- two eggs
- half a glass of rice
- 1 large carrot and 1 onion
- chicken bouillon cubes 1 pc
- salt to taste
- ground black pepper to taste
- vegetable oil two tablespoons
- water 2 liters.
- greens 1 bunch
- 3 cloves garlic
- bay leaves 3 pcs.
Cooking meatballs
Before preparing the soup itself, you must first stick the meatballs. To do this, first scroll the beef through a meat grinder. It turns out minced meat. Add eggs to the minced meat, put two tablespoons of flour, salt, ground black pepper. Stir well, it is better to stir with your hands.
When everything is mixed, you can sculpt minced meat balls. They should be small, round. Pour the remaining flour into a wide bowl. Roll meatballs in it. Then fold them into some kind of flat form, cover with a bag and put them in the freezer for half an hour. This must be done so that they are fixed and do not fall apart during cooking.
You can throw the meatballs into the soup and not frozen, then they are not doused in flour.
Soup preparation
While the meatballs are freezing, peel the potatoes, onions, and carrots. Cut the potatoes into cubes. Finely chop the onion. Grate the carrots on a coarse grater.
Pour water into a saucepan. Put a bay leaf, half a teaspoon of salt and a bouillon cube there. Put it on high heat. When the water boils, reduce the heat to low and toss in the beef balls. It is important to monitor the foam. And to remove it on time, use a slotted spoon or a small sieve for this.
The meat broth is ready.
Next, you need to make a fry of onions and carrots in a pan. Heat a frying pan over high heat, pour vegetable refined oil into it and add chopped onions and grated carrots. Stir fry for 5-8 minutes, if part of the frying remains damp, then there is nothing to worry about, vegetables will be cooked in soup. Pour the onions and carrots directly hot into a saucepan with broth. Now you can put diced potatoes and rice washed in running water there. Try the soup and add pepper and salt as needed.
Simmer the soup for about 15-20 minutes.
At the end, add finely chopped herbs, press three cloves of garlic through a garlic press and add to the soup for flavor.
