Celery-based soups are always healthy and very light. You can add a certain amount of fresh vegetables to such a soup and you will get a wonderful vitamin dish. The soup tastes very rich and soft, although there is absolutely no meat in it.
Ingredients:
- salt to taste;
- soy sauce - to taste;
- olive oil - 2 tablespoons;
- lime - 1 pc;
- chili pepper - 0.5 pcs;
- quinoa - 50 g;
- tomato - 1 pc;
- grated ginger - 1 tsp;
- carrots - 1 pc;
- onions - 2 pcs;
- celery stalks - 5 pcs.
Preparation:
Pour water into a saucepan and place on fire. While the water is heating, pour olive oil into the pan, add the pre-chopped hot peppers and fry for a minute. Add the grated ginger. Cut the onions into small cubes and add them to the pan after 2 minutes. Fry, stirring occasionally, until golden brown.
Chop celery stalks, grate carrots on a coarse grater. Place prepared vegetables with other ingredients on top of the pan. Fry until the whole mass is tender.
Peel the tomato and grind into a paste. Place in a skillet, or use a tablespoon of regular tomato paste instead of tomatoes. Pour in 2 tablespoons of water, stir and cover the skillet with a lid. Simmer for a few minutes.
The water in the pot will boil by this time, so put the quinoa in it. Quinoa is such a healthy cereal if anyone doesn't know. You can buy it today in any good supermarket. Boil it for 6 minutes, then transfer the stewed vegetables to a saucepan and mix everything thoroughly.
Squeeze lime juice into a saucepan, lightly salt. Then add the soy sauce to taste to make the soup slightly salty. Cook for another 5 minutes and then remove from heat. Soup with celery and vegetables is ready, you can serve it to the table by pouring it into portioned plates.
