Solyanka is an original soup that combines very unusual products such as olives, gherkins, lemon. Among the many options for making a hodgepodge, this recipe is one of the fastest and simplest, as it is prepared from the ingredients available to every housewife.

It is necessary

  • - 2-3 sausages;
  • - 1 medium onion;
  • - 2 potato tubers;
  • - 1-2 carrots;
  • - 1 small jar of boneless olives;
  • - several gherkins;
  • - 1/3 large fresh lemon;
  • - vegetable oil for frying;
  • - 40-50 ml of natural tomato paste.

Instructions

Step 1

Fill the pot 2/3 full with water, bring to a boil. The amount of water depends on how thick the hodgepodge you want to end up with.

Step 2

Wash potato tubers, peel, wash again and cut into wedges. As soon as the water boils, you need to throw potatoes, cut into cubes or strips, into it.

Step 3

Remove the foil from the sausages and cut into slices about 3-4 mm thick. Fry the chopped sausages in a skillet with vegetable oil and put in a saucepan with the potatoes. Leave to cook over moderate heat.

Step 4

Peel carrots and onions, rinse under cold water. Grate the carrots coarsely and chop the onion into small cubes. Pour everything into a hot skillet with oil and fry, stirring occasionally, for about 10 minutes. Then put in the tomato paste, stir and cook for another five minutes.

Step 5

At this time, wash the lemon, cut off about a third, cut into circles, and those, in turn, into 2-4 parts. Cut the olives and gherkins into circles.

Step 6

Put the fried onions and carrots in a saucepan, add gherkins, lemon and olives, mix. Cook the hodgepodge soup for another 15 minutes. At the end of cooking, taste the dish with salt and, if necessary, add a little salt.

When serving, you can add chopped fresh herbs, mayonnaise or sour cream to the finished hodgepodge.
