It is necessary

    • liver;
    • pan;
    • milk;
    • salt.

Instructions

Step 1

If you've got frozen liver, defrost it before cooking. This can be done by leaving the meat for about half an hour or an hour at room temperature, covering it with a cloth or cling film to prevent it from drying. You can reheat it faster in the microwave. Select the fast defrost mode and indicate the weight of the liver piece on the display. Place it in a microwave-safe dish and heat in it until the liver is tender.

Step 2

Before cooking, wash the liver and place it in a bowl of cold water for 5-10 minutes. She should get wet. Beef liver, if desired, can be soaked in milk. This is necessary if you do not like the specific bitterness of the offal and want to reduce it.

Step 3

Cook this offal in boiling salted water. If you are cooking beef liver, remove the cling film. To do this, cut it with a knife and pull it off completely. In the case when the film cannot be removed, scald the offal with boiling water and remove it after that. If you see noticeable streaks in the meat, you can also gently remove them with a sharp knife. You can also do this after cooking.

Step 4

Cook the beef liver for 30-40 minutes, depending on its size. For quicker cooking, it can be cut into cubes. In this case, cooking will take 8-10 minutes. The liver's readiness is determined by its structure. There should be no blood inside, but the product itself should remain soft and slightly porous. The color should also change from dark red to grayish. You can check the readiness using punctures with a fork. Cook the chicken liver in boiling water for ten to fifteen minutes.

Step 5

Please note that using a double boiler will increase the cooking time. For example, chicken liver is cooked in it for about half an hour, beef - an hour or more.
