Kharcho soup is the oldest national Georgian dish that has won the love of the peoples of the whole world. Although the recipe for this dish is rather complicated, if desired, any housewife can cook the classic "Kharcho" at home, having a set of necessary ingredients.

- - beef (500 g),
- - onions (2 pcs),
- - rice (5 tablespoons),
- - walnut (100 g),
- - garlic (3-4 cloves),
- - tomato paste (2 tablespoons),
- - tkemali sauce (2 tablespoons),
- - hops-suneli,
- -Red pepper,
- - chilli,
- - salt,
- - Bay leaf,
- - greens to your taste.
Instructions
Step 1
To prepare delicious "Kharcho" according to the classic recipe, you need to take a good piece of fresh beef (preferably with bones). Cut it in half or into three parts, fill it with water and set it to simmer in a saucepan over medium heat for at least an hour (preferably 1, 5-2 hours) to make the broth rich. We take out the meat from the broth, cool and grind.
Step 2
Preparing frying for the Kharcho soup. To do this, cut the onion, garlic, chili and put it in a hot frying pan. Stir constantly. After 1 minute, add the tomato paste and tkemali sauce, as well as the hop-suneli seasoning. Fry for another 1 minute and remove from heat. Add the resulting mixture to the meat broth. We throw the bay leaf there.
Step 3
We take rice, previously washed and soaked in warm water. It is better to use round grain varieties. Add the required amount to the broth. Next, we send the cooled chopped beef meat to the pan. Add salt.
Step 4
Cook the soup for 15-20 minutes over medium heat. Do not forget to stir. In the meantime, we are preparing the greens. Take cilantro, parsley, dill, basil (whichever you prefer), finely chop. Grind a walnut and a clove of garlic in a mortar. Mix with herbs and send the resulting mixture to "Kharcho". Cook the soup for a few more minutes, add red pepper to taste and remove from heat.
