Refreshing lemon ice cream dessert. The dessert does not include eggs or dairy products, which is why it is called sorbet and not just ice cream. Lemon sorbet can be prepared in a resealable plastic container or in an ice cream maker, if available.

It is necessary

  • For six servings:
  • - 1 glass of water;
  • - 1/2 cup each sugar, lemon juice, soda water;
  • - zest from 1 lemon;
  • - 6 strips of lemon zest for dessert decoration.

Instructions

Step 1

Cut the lemon zest into small pieces or grate, mix it in a saucepan with 1 glass of water and sugar. Bring water to a boil, then reduce heat to medium, simmer for about 5 minutes, stirring slowly. Then remove the pan from the stove, let the contents cool completely.

Step 2

Mix the cooled lemon syrup with lemon juice and mineral water with gases. Whisk this mixture a little. Pour the mixture into an ice cream maker or plastic container. Cook in an ice cream maker according to the instructions.

Step 3

For those who do not have an ice cream maker, simply freeze the dessert in a plastic mold. Keep the dessert in the freezer for 2 hours, then take it out, whisk the mass with a whisk, return it to the freezer, stir for 4 hours every hour. The more often you stir the treat, the more air bubbles will get into the dessert, therefore, you will get a more airy lemon sorbet.

Step 4

Garnish each portion of the finished sorbet with a spiral of lemon peel. Remember that this is a natural homemade delicacy without any preservatives - it will not be stored in the freezer for a long time, use ready-made lemon sorbet within 1 week.
