It is necessary

  • For the test:
  • • 1 glass of flour;
  • • 1 chicken egg;
  • • 170 g butter;
  • • 2 pinches of salt;
  • • 2 tablespoons of fresh milk.
  • For filling:
  • • ½ eggplant;
  • • 1 small vegetable marrow;
  • • 1 bell pepper;
  • • 1 chili pepper (for those who like spicy);
  • • 2 large tomatoes;
  • • 1 clove of garlic;
  • • 180 ml heavy cream;
  • • 2 eggs;
  • • 1 lemon;
  • • 1 bunch of parsley;
  • • sunflower oil.

Instructions

Step 1

Slice the butter into small pieces, combine with flour and rub into small crumbs with your hands. Drive an egg into flour crumbs, pour in milk and add salt. Knead a tight elastic dough, put it in the refrigerator, after wrapping it in cling film.

Step 2

While the dough is infused, you need to prepare the filling. To do this, cut ½ part of the eggplant into quarters into rings, put on a plate, add salt and leave to stand for 15-20 minutes. This is necessary so that all the juice is released from the eggplant, and the bitterness also disappears. After the eggplant, just wash and dry.

Step 3

Peel the zucchini from seeds and peel, cut into thin plates. It is not necessary to peel young zucchini.

Remove the skin from the tomatoes with boiling water. Cut the peeled tomatoes into 4 equal parts. In this case, each part will also need to be cleaned of seeds with pulp, and what remains is cut into medium pieces. Peel and chop bell peppers in the same way as tomatoes.

Step 4

Combine all vegetables in a skillet, season with garlic and butter passed through a garlic. Place on the stove and cook for 10-12 minutes.

Step 5

Grease a baking dish (26 cm in diameter) with a piece of butter and sprinkle with flour. Remove the dough from the refrigerator, roll it into a thin crust, transfer to a mold, level, forming high sides, and beat with a fork.

Cut the chili into small cubes. Note that you need to add it only at will. Put the fried vegetables on a dough base, sprinkle with chili and smooth with a spoon. Combine eggs with cream, salt and black pepper. Beat everything until smooth and pour on the pie over the vegetables, leaving 2-3 tablespoons of this filling.

Step 7

Place the prepared pie in the oven and bake for about half an hour. Finely chop the parsley with a knife, combine with lemon zest and a pinch of salt. After half an hour, remove the cake from the oven, cover with green mass, pour the remaining filling and send it back to the oven for 5-10 minutes. Remove the finished ratatouille pie from the oven, cool, cut and serve along with your favorite drink.
