In autumn, juicy and very tasty pumpkins ripen, from which you can prepare a lot of delicious dishes and desserts. One of these desserts is an open pie with dates and pumpkin, which in France is called tart.

Ingredients for the dough:

  • 250-300 g of sifted flour;
  • half a pack of butter;
  • 4 tablespoons of cold water;

Ingredients for the filling:

  • 150 g dates;
  • 500 g pumpkin;
  • 250 g of cottage cheese;
  • a couple of tablespoons of honey;
  • 2 chicken eggs;
  • 5 teaspoons vanilla pudding.

Preparation:

  1. Quickly grind the frozen butter on a fine grater, combine with sifted flour and mix until smooth.
  2. Add cold water to the same mass and knead the dough. If it disintegrates, you need to pour in another spoonful of water and knead the dough again so that it takes one lump. Note that you cannot knead for a long time. Give the finished dough the shape of a cake.
  3. Wrap the flat cake in plastic wrap and send to the refrigerator for 45 minutes.
  4. Bake the pumpkin in the oven, cool and cut into 2 equal parts. Cut the first part into cubes, put in a blender and mash, and set the second part aside for a while.
  5. Add cottage cheese to the pumpkin mass, mix everything and mix again in mashed potatoes.
  6. Drive eggs into the broken mass, pour in honey and add vanilla pudding. Mix everything until smooth, homogeneous texture.
  7. Remove the dough from the refrigerator, roll it into a thin crust, transfer to a baking dish (20 cm in diameter) and smooth, form sides about 3 cm high.
  8. Place the mold with the dough again in the refrigerator for half an hour, then remove and immediately place in the oven. Bake for 15 minutes at 200 degrees.
  9. Cut the dates and the second part of the pumpkin into medium cubes, you can use slices.
  10. After 10 minutes, evenly spread the cubes of dates and pumpkin on the set base. Pour everything with the previously cooked curd mass and send it back to the oven for 35-40 minutes.
  11. After this time, remove the finished cake from the oven, cool completely and send it to the refrigerator for one night. In the morning, the tart can be sliced and served.
