Salad with cottage cheese and vegetables

You will need:

- low-fat cottage cheese - 150g;

- sour cream or natural yogurt - 100g;

- garlic - 1 clove;

- cherry tomatoes - 8-10 pcs.;

- fresh cucumber - 1pc.;

- olive oil - 2-3 tablespoons;

- loaf - 2 slices;

- lettuce, green onions, parsley;

- salt, black pepper.

Wash lettuce, green onions and parsley in a bowl of cold water. Place on a towel to drain the water. Wash and dry the vegetables. Dry the loaf in a toaster or in a dry frying pan until golden brown. Peel the garlic, chop finely or squeeze through a press. Finely chop the green onion and parsley. Lightly salt the cottage cheese, pepper, add garlic, sour cream and mix well. Cut the cherry tomatoes into halves, large ones into quarters. Cut the cucumber diagonally into thin slices. Cut a large cucumber into strips.

Place the lettuce leaves on a large platter. Put the curd mass with a tablespoon in small portions in a circle and in the center. Place vegetable slices on each portion of cottage cheese. You will need:

- tomatoes - 500g;

- canned corn - 100g;

- salad onion - 1 pc.;

- olive oil - 2-3 tablespoons;

- fresh parsley;

- salt, black pepper.

Wash the tomatoes and cut into slices. Drain the corn. Peel the onion and cut into thin rings. Chop the parsley coarsely. In a bowl, combine olive oil, salt and pepper. Place a layer of tomatoes on a flat dish, then a layer of onions. Top with corn. Pour the dressing over the salad and sprinkle with herbs. Can be garnished with black olives.

Tomato and Bean Salad

You will need:

- tomatoes - 3 pcs.;

- sour cream - 4-5 tbsp;

- garlic - 1 clove;

- canned beans in tomato - 100g;

- green onions, fresh parsley or dill;

- salt, black pepper.

Wash tomatoes and greens, dry on a towel. Coarsely chop the tomatoes. Chop the greens finely. Peel and squeeze the garlic through a garlic press. Drain any excess liquid from the beans. In a deep bowl, combine the tomatoes, garlic, beans, and herbs. Season with pepper, salt, sour cream and stir. You can add wheat or rye croutons.

Cucumber salad

You will need:

- cucumbers - 3-4 pcs.;

- chicken eggs - 2-3 pcs.;

- soy sauce - 2-3 tbsp;

- rice vinegar - 1 tsp;

- olive oil - 2-3 tablespoons;

- green onions;

- ground black pepper.

Boil eggs soft-boiled, cool in cold water and peel gently. Wash cucumbers, peel and cut into strips. Finely chop the green onion. In a bowl, combine soy sauce, olive oil, rice vinegar, and a pinch of black pepper. Put the cucumbers on a plate in a slide, make a small depression in the center. Pour the dressing over the salad, sprinkle with green onions. Place eggs in the center of the salad.

Beetroot salad with cream cheese and croutons

You will need:

- beets - 2 pcs.;

- garlic - 1-2 cloves;

- loaf - 2 pieces;

- creamy curd cheese "Almetto";

- fresh parsley;

- olive oil;

- rice vinegar - 1 tsp;

Wash the beets, peel and cut into thin strips. To make it faster, you can grate it on a coarse grater. Heat a frying pan with a little olive oil and place the beets on it. Fry over medium heat, stirring frequently, for 10-15 minutes. Place on a serving dish and cool slightly. Alternatively, the beets can be stewed in the microwave in a deep plate under the lid at maximum power for 7-10 minutes. Rinse the greens, dry and chop coarsely. Peel the garlic and squeeze it through a press.

Chop the loaf in a blender or with your hands into coarse crumbs, mix with garlic and dry in a pan until golden brown. You can dry the bread in a toaster, grate it with garlic and break it into medium pieces. Salt and pepper the beets, add rice vinegar and stir. Sprinkle bread crumbs over the salad. With two teaspoons dipped in cold water, form dumplings from the curd cheese and spread over the beets. Sprinkle herbs over the salad.
