Rice with vegetables is a fairly simple dish. When cooking, you can use almost any vegetables on hand. Zucchini can be replaced with cabbage, you can add green beans, corn. The choice of rice is very important, use the highest quality long grain varieties.

- 2 medium onions
- 3 tomatoes
- 2 bell peppers
- 1 vegetable marrow
- 4-5 cloves of garlic
- 1/3 hot pepper pod
- 2 bay leaves

Step 1
Peel the zucchini and cut into strips.

Peel the bell pepper and cut into strips.

Peel the onion and cut into half rings.
Step 4
Remove the skin from the tomato. To do this, release the fruits in boiling water for 1 second, and then in cold water, the peel can be easily removed.

Cut the tomato into slices.

Peel and crush the garlic with the flat side of a knife blade.

Saute the courgette lightly for 2-3 minutes.

Saute the onion separately until transparent.

Add bell pepper to the zucchini and fry for 5 minutes over low heat.

Add bay leaves to the vegetables.

Add the tomatoes and onions and simmer the vegetables for 3-5 minutes with the lid closed.

Add rice to vegetables and stir to soak the rice with vegetable juice and oil.
