How ice cream is made in production

The processes for making ice cream at home and in production are very similar. Only the scales are different. First, the main components (cream, milk, sugar, etc.), the composition of which is different for each factory, are thoroughly mixed in a huge vat. Then the mixture is boiled down in special cooking units and homogenized. In order to prevent the ingress and development of bacteria, it is pasteurized, and then the necessary flavor is added to it. This can be cinnamon, vanilla, fruit, or any other variation. The resulting workpiece is frozen. This is done with a huge pipe connected to smaller pipes. The future ice cream is pumped through a large pipe, and the rest contain coolants. Their role is played by various chemical compounds (ammonia, etc.), which contribute to rapid cooling, but never interact directly with ice cream, so they do not pose any health risks. The whole process is computer controlled.

The resulting chilled mixture is poured into special containers and frozen in a short time (to avoid large crystals) to very low temperatures. This procedure is called strengthening. The ice cream is then ready for transportation.

How homemade ice cream is made

Ice cream is made at home in different ways, since there are a lot of recipes. But they all come down to specific actions and products as a result. The main ingredients of ice cream are yolks and whipped cream. It is to them that the delicacy owes its creamy consistency. The rest of the additives depend on the taste of the manufacturer and the recipe used. The ingredients are mixed using a mixer, wooden spoon or whisk. Next, ice cream is prepared in special ice cream makers. They are either manual or electric and are designed to provide continuous agitation. The electrical device has an automatic cooling mode. The manual ice cream maker consists of two containers, one of which is placed in the other. A mass of future sweetness is laid in the inner one, and shards of ice with salt are laid in the outer one. During preparation, the mixture is constantly stirred (automatically or using a special handle) until it thickens (while hardening is not allowed). You can carry out the whole process manually, but this requires some effort and constant stirring, which is not always convenient.
