- -300 grams of cauliflower
- -700 grams of porcini mushrooms
- -2 tablespoons of chopped onion
- -¼ cups of chopped tomatoes
- -1 large egg
- -1 egg white
- -1 teaspoon coconut oil
- -100 ml soy sauce
- -1 whisper of salt
- -1 pinch of pepper
- -1 tablespoon chopped mint
- -400 grams of rice

Step 1
Rinse the rice thoroughly under running water and cook for 30-40 minutes. Determine the readiness of the rice by its softness. Transfer the rice to a bowl and set aside. You will need it later.
Step 2
Rinse the cauliflower, remove old leaves and inflorescences. Place it in a food processor and chop it to the size of rice.

Wash and chop porcini mushrooms, green onions and tomatoes.

Beat the eggs together. Add a pinch of salt to them. Pour the whole mixture into a shallow skillet and fry until the consistency of fried eggs. Let the eggs cool and cut into small pieces.

Pour coconut oil into a separate skillet. Add the chopped onion and simmer, covered, for 5-6 minutes. Add mushrooms and sauté with onion until golden brown. Transfer cauliflower, season with salt, pepper and soy sauce. Cover and simmer for 10 minutes.
Step 6
Remove skillet from heat and stir in tomatoes. Stir. Chop fresh mint and basil. Combine the chopped scrambled eggs and herbs with the mixture from step 5. Serve immediately after cooking.
