It is necessary

  • - brown or white rice - 2 tbsp. (it is better to cook in advance);
  • - onions - 1 pc.;
  • - coconut oil - 1 tablespoon;
  • - garlic - 6 cloves;
  • - lime - 1 pc. (you only need juice);
  • - raw shrimps - 500 g;
  • - zucchini - 1 pc.;
  • - peas - 1 tbsp. (you can take canned);
  • - mushrooms - 100 g;
  • - sweet pepper - 1 pc;
  • - eggs - 3 pcs.;
  • - soy sauce - 2 tablespoons;
  • - pepper to taste.

Instructions

Step 1

Cut pepper, mushrooms, zucchini into cubes of approximately the same size. In a preheated frying pan, fry finely chopped onion, 3 cloves of garlic, pepper, mushrooms, zucchini until tender (about 10 minutes).

Step 2

In a separate bowl, mix the lime juice and the remaining 3 cloves of garlic, then put the peeled shrimp in this bowl, let it soak. Then fry the shrimps in coconut oil for a couple of minutes. Remember to stir the shrimp constantly while frying.

Step 3

Add cooked rice to the fried vegetables, mix everything and move a little to the side. Fry the eggs on the free side of the pan until tender and mix with the rice. Put peas on rice with vegetables, pour over soy sauce and add pepper, stir again. When serving on rice, a portion of shrimp is laid out on top and, if desired, garnished with green onions.
