Scallops cannot be cooked for a long time, like all other seafood, otherwise they will become too tough. The less you fry the scallops, the better. Fried scallops are very simple to prepare; before frying, they only need to be marinated in a mixture of chili peppers, wine, sugar and garlic.
It is necessary
- For four servings:
- - 12 scallops;
- - 5 cloves of garlic;
- - 3 chili peppers;
- - 3 tbsp. tablespoons of olive oil, dry sherry;
- - 1 teaspoon of sugar.
Instructions
Step 1
Chop the garlic with a sharp knife, mix it with wine and sugar. Peel the chili pepper, chop finely, add to the garlic. Stir until the sugar is completely dissolved.
Step 2
Add 2 tbsp to the fragrant mixture. tablespoons of butter and scallops, mix gently, leave to marinate. At room temperature, 30 minutes is enough, and scallops can be left in the refrigerator for several hours.
Step 3
Now use a slotted spoon to remove the scallops from the marinade. Do not rush to pour out the marinade - you still need it.
Step 4
Take a non-stick frying pan and heat some olive oil on it.
Step 5
Sear the scallops on each side for 1 minute. Remove the scallops from the pan, pour the marinade into it, boil it for 3 minutes.
Step 6
Pour the fried scallops with the aromatic sauce, which is obtained from the marinade.
