  • - salt - 1 tbsp. l.
  • - vinegar 9% - 4 tbsp. l.

Step 1

Choose ripe tomatoes for ketchup, wash by changing the water several times. Cut into pieces, pass the tomatoes through a meat grinder, set the resulting mass to boil over low heat for about one hour. Make sure that the mixture does not burn. Stir occasionally with a wooden spoon. You can do otherwise: boil the tomato slices for twenty minutes, and then rub the resulting mass through a sieve and then boil it until thickened.

Step 2

Fold into cheesecloth: peppercorns, coriander, cloves, herbs. Tie the ends to form a pouch. Add salt, sugar and vinegar and seasonings in cheesecloth to the tomato mass. Simmer for another ten minutes over low heat. Remove the seasoning from the ketchup.

Step 3

Wash prepared jars, heat them in the oven, or steam. If you use an oven, then you need to put the jars only in a cold one, you need to heat it at a low temperature. If they overheat, the glass may burst when pouring the ketchup. After seaming the jars or bottles of ketchup, cover with a warm blanket, leave to cool. You can store it in the refrigerator, cellar or on a cool balcony.
