Homemade tomato ketchup is a great winter preparation that is quick and easy to prepare. Ketchup is ideal for appetizers, salads, second hot dishes; you can make gravy, pasta or sauces from it. Ketchup made from natural ingredients is a health food.

Ketchup "Classic"

For cooking you will need:

- 3 kg of tomatoes;

- garlic - 1 clove;

- 150 g of sugar;

- 25 g of salt;

- 80 ml of vinegar (6%);

- cloves - 20 pcs.;

- peppercorns - 25 pcs.;

- cinnamon (on the edge of a knife);

- red hot pepper (on the edge of a knife).

Wash the tomatoes, boil them in boiling water and remove the skin, then cut them into small pieces and place in a saucepan. Put the saucepan on low heat and boil the tomatoes for a third. Then add sugar, cook for another 10 minutes, add salt and keep on fire for 3 minutes.

Add spices and seasonings to the saucepan to the tomatoes, boil the tomato mass for another 10 minutes, and then remove from heat and cool slightly. Pass the tomato mass through a sieve or colander, then put it back in a saucepan and bring to a boil. Pour vinegar into the ketchup and pour into sterilized jars that need to be rolled up, covered and refrigerated for storage.

Ketchup "Spicy"

You will need:

- 3 kg of tomatoes;

- 500 g of onions;

- 300 g of granulated sugar;

- 300 ml of vinegar (9%);

- 2 tbsp. l. mustard;

- bay leaves - 2-3 pcs.;

- black peppercorns - 5-6 pcs.;

- salt (to taste).

Wash the tomatoes and cut into small wedges. Wash onions, peel and chop finely. Place the onions and tomatoes in a saucepan and cook over medium heat, covered for about 20 minutes. Wipe the tomato mass through a sieve.

Heat the vinegar, put the spices in it, bring to a boil, then cool and pour into the tomato mass.

Put the ketchup on low heat and reduce to a third, then add sugar, salt and mustard. Boil the ketchup for another 10-15 minutes, and then put it in sterilized jars, seal it and put it in the refrigerator for storage.

Ketchup "Spicy"

You will need:

- 6 kg of tomatoes;

- garlic - 1 pc.;

- 300 g of onions;

- 450 g of granulated sugar;

- 100 g of salt;

- carnation - 6 pcs.;

- allspice peas - 6 pcs.;

- 40 ml of vinegar (70%);

- 350 ml of vinegar (9%);

- ¼ h. L. cinnamon;

- ½ tsp mustard.

Wash the tomatoes, cut them into 4 pieces, blanch them in boiling water, and then dip them into cold water. Remove the skin from the tomato. Also, if you do not like the seeds in ketchup, then select them with a spoon.

Place the sliced tomatoes in a blender and chop. Peel the onions and garlic, then chop. Spices must be ground in a mill.

Combine all the ingredients (except vinegar, salt and sugar) in a saucepan, put on fire, add 1/3 of the sugar and boil the tomato mass by a third. Next, add the remaining sugar and cook for another 10 minutes. Put salt in the ketchup and add vinegar, boil for another 10 minutes, and then place in sterilized jars and roll them up.
