This aromatic, tasty and very healthy dish is perfect for a family meal or a party with friends. It is best cooked from seasonal vegetables, which contain the maximum amount of nutrients.
It is necessary
- Ingredients for 4 persons:
- - chili pepper;
- - 3 tablespoons of tomato puree;
- - 3 tablespoons of olive oil;
- - 3 cloves of garlic;
- - 8 skinless chicken thighs;
- - 500 g of young potatoes;
- - 4 sprigs of thyme;
- - 140 g smoked bacon;
- - 400 g of small varieties of tomatoes;
- - salt and pepper.
Instructions
Step 1
Preheat the oven to 180C. Cut the chili pepper lengthwise, remove the seeds. If you like the most spicy dishes, you can leave the seeds. Wash the potatoes thoroughly with a brush, but do not peel them.
Step 2
In a blender, grind the chili peppers with tomato puree, olive oil and peeled garlic cloves.
Step 3
Put chicken thighs and potatoes on a baking sheet, salt and pepper generously, put tomato paste on top, mix with your hands or with a fork. Add thyme sprigs and place the baking sheet in the oven for 30 minutes.
Step 4
Cut the bacon into small cubes or strips, sprinkle the chicken and potatoes with it, bake for another 15 minutes.
Step 5
Lastly, put the tomatoes in a baking sheet, cook the dish for another 15 minutes. Serve ready-made chicken with vegetables with toasted crispy bread and any green salad leaves.
