Buckwheat and its varieties

Buckwheat produces: unground (actually buckwheat or buckwheat) - whole grain without a shell, cut (chopped) - crushed buckwheat grain, "Smolensk groats" - crushed cereal grains, and buckwheat flour, from which you can bake pancakes, flat cakes, dumplings and other dishes. Among the latest advances in food production are buckwheat flakes, which allow you to cook buckwheat porridge for 5-6 minutes. By the way, this product is also used in medicine.

Buckwheat dishes: culinary educational program

Traditionally, a tasty and crumbly porridge is cooked from buckwheat, but in reality, in the arsenal of a skilled housewife, there are always a couple of recipes, the main ingredient of which is buckwheat. It is added to soups and casseroles, openwork pancakes, lush pancakes are baked from it, viscous jelly is cooked, and rolled cereals ("Smolensk") are used as a filling for pies, cutlets and meatballs.

To make the cutlets more satisfying, add buckwheat porridge cooked until cooked into the minced meat. Refried onions until golden brown will help to enhance its taste.

You can make a curd casserole from buckwheat (although in finished form it looks more like a pudding or cereal), which will require:

- 200 g of cereals;

- ½ tbsp. milk;

- 200 g of cottage cheese;

- 60 g granulated sugar;

- 2 tbsp. vegetable oil (for lubricating the mold);

- a little sour cream (to grease the casserole).

Pre-washed buckwheat should be chopped in a blender and boiled in water for several minutes. Then, adding milk, add the cereal. In a separate cup, mix the remaining ingredients and add the cooked (cooled) porridge. Put the resulting mass in a mold and grease with sour cream. Bake for 40-45 minutes at 160-170 ° C.

A dietary dish will turn out if you serve an old Russian dish on the table - a buckwheat and liver casserole. It is poured over with sour cream or béchamel sauce.

Buckwheat can also be added to stuffed cabbage rolls and stuffed peppers, or you can serve buckwheat salad, which also includes sautéed onions, herbs, sausages, aromatic peppers and soy sauce.

And finally, baked goods. You can grind buckwheat yourself, or you can buy buckwheat flour in the store and bake bread, pancakes and pancakes from it. And if wheat flour should be added to the dough kneaded with buckwheat, then only buckwheat flour can be used for pancakes or pancakes. There is even a recipe for a "cake" with buckwheat, however, it is more a meat product than a sweet one, because among the ingredients are sausages, eggs, hot chili sauce and spices.
